Power Foods Recipes: Cuties & Carrots Smoothie

Power Food this week is Carrots! The carrot is a root vegetable with the most commonly eaten part being the taproot. They are usually orange in color although purple, red, white, and yellow varieties also exist. The vegetable is often pulped, mashed, boiled, puréed, grated, fried, steamed, stewed, baked, juiced or eaten raw. Carrots are typically used in stir-fries and salads, but also in soups and added to baby foods or pet foods. They can be dehydrated or deep-fried to make chips, flakes, and powder. Carrots have a higher natural sugar content than all other vegetables with the exception of beets. This is why they make a wonderful snack when eaten raw and make a tasty addition to a variety of cooked dishes.

Health Benefits of Carrots

Carrots contain Vitamin K perhaps best known for its role in the blood clotting process. Often, when people hear the term “blood clot,” they might sometimes jump to the conclusion that a blood clot is bad. But there are many times when it is very important for our blood to clot. For example, blood clots are necessary to stop bleeding when our skin gets punctured or scrapped. This is why we call it SCAB POWER!
